If I am selling myself I do not include appliances. I can always throw them in if it's a sticking point with the buyers. Plus it makes the kitchen look much bigger without them.
However if I'm selling through a real estate agent I include the appliances because I won't be there to feel the buyers out and throw in appliances to seal the deal if necessary.
We'll always throw in all appliances (stainless, including washer/dryer).
When a buyer has a choice between a competitors house -- where they'll have to buy appliances, washer, dryer, mini-blinds, etc -- and ours that is truly move-in ready, this can certainly be a deciding factor.

Not only do I add a fridge but I add a stainless steel french door one- LOVE THOSE!! My area I believe demands a fridge so I guess it also depends on your area.
For me when I view rehab pictures without a fridge it makes it look incomplete like the seller skimped on something and I automatically go hmm where is the fridge. Where else did the seller skimp. I get Ryan's point that it makes the kitchen look bigger without it but as a woman I wanna see the whole picture- sell me the dream.
Also you shouldn't assume people use or prefer thier own fridge thats so not true. Most who are coming from an apartment may not have a fridge and even if they do- who doesn't want a brand new one that matches all your other applicances. If they are moving from a house they now own to that one- then providing a fridge may give them the option of giving the one they have to thier buyer and again who doesnt want a brand new fridge that matches all your other appliances.
Another important factor for me is that most of my buyers are first-time home buyers, so it's unlikely they own any appliances. If you're doing a more custom home where the buyers likely have their own appliances (or plenty of disposable income to purchase the appliances they want), you might have a different perspective.

I always include all kitchen appliances in stainless for all the reasons mentioned above. We spend a fair amount of money and time fully staging each house and consider this essential to making a home look complete.

I always did white fridge & stove, but I'm considering moving to black. Seems to be the popular thing - anybody else doing this?
Depends on the target purchaser. If the property will be priced sub 100K the buyer probably has little or no extra funds. A refrigerator might actually be the deciding factor.
On pricier properties I would do everything but the fridge.

Yes, all kitchen appliances. Only stainless on the nicer homes or if the decor requires it.
