Signing Contracts

I have a couple questions about contracts.

1. When signing a contract with the seller and or buyer should there be a notary present? Are we required to sign it at a specific place like the title company? 

2. After the seller and I sign the contract, do I hold on to it and the earnest money or send them both to the title company?
