Utility transitions on rental properties

My apology upfront, as this is most likely a really dumb question for most of you,  I will be closing on a property that will be a rental on10/10 and then another one on 10/20.  Not sure what the heck I'm doing, but I'm DOING it, regardless.  So,  when you call and transition the utilities into your business name while you renovate or whatever.  But if your tenants will be paying the utilities and they will need to put them in their name, how do you ensure that the utilities are not inadvertently shut off if the tenant doesn't pay and how will you be notified if they are late and at risk for this?  Thanks so much Rachel
