Like Rob said: landlords don't rent to law enforcement people because they fear retaliation if they have to evict for non-payment.

Seems silly to me, but you're certainly within your right to rent to them or not rent to them. Most cops I know have stable employment, decent incomes, and you don't have to worry about them letting gang bangers, drug dealers, or other felons hanging out on your property. Seems like the ideal tenant to me.

I'm still not clear on what you mean by "dictating the law" to you. Are you planning on doing something against the law (i.e. illegal tenant lockout, entry without permission, etc)? If not, then you likely have nothing to worry about. If you do plan on doing something like that, yeah...I guess you might get the "law dictated" to you.
