Converting senior living facility into multifamily

Hello! I'am looking at a 32 unit assisted living facility to convert into multifamily rentals. The units themselves have a great layout with in unit W/D hookups. The only issue I'am having is trying to figure out what to do with the commercial kitchen/ large dining room, that was setup to serve to the residents. Anyone that has converted this type of building or is thinking to do so, what are your opinions on what could be done with this large kitchen and open eatery area.
