First vacation rental / meddling neighbor

I purchased my first reno and now have it listed as a vacation rental. I have it rented about 50% of the weekends to couples who come to use trails or go sight seeing, my family uses it when I do not have renters. Not a party house. My closest neighbor is the only year round resident and feels it is her right to know who is coming and going.  I went before the town board for permits and am by the book. She is very opinionated on most everything we do such as landscaping, using our fire pit, feeding animals, politics, etc.. When the trees are full she can not see my house at all.  She lives uphill approx 300 feet away.  I feel like I am under surveillance and am constantly being questioned. She 'happens upon' my renters when they are outside and has even invited one couple over for supper.  I tend to give vague answers and attempt to change the subject as I do not want her to know my business.  I am trying desperately to stay on friendly terms but she is really irritating me.  The renters have not complained about her yet but I do not want her to become an annoyance.  Has anyone else been in a similar situation that can provide some advice?
