My wife and I have had all these thoughts and more. We've also lived the dream (cough cough nightmare) of remodeling a 1940s house. We've remodeled apartment units ourselves to save money and later hired out the same job paying thousands more. At this next meet up we will open the spreadsheet on 3 remodels and discuss what we did, why we did it and what we would have done differently.
