What kind of insurance do rehabbers get? Builders risk insurance with general liability? Which company would you recommend? I'm currently looking for one for a single family one story home without HOA.

 Simple my Ins co, calls it vacant insurance. Just call your insurance co. Do you have a deal you are working on ?

 Vacant property insurance in and of itself is not enough to cover during remodeling.  It depends on what work is being done and the rules of the particular insurance company/policy.  Talk to your agent and don't try to hide material facts about what you're planning to do.  Will only cause issues in the long run.
