should I hire a general contractor?

I am a complete newbie in this world and am trying to bid for hiring contractors. I need to build an attached garage, roof repair/replacement, open up kitchen, and make two mudrooms. I also plan to extend enclosed porch or sunroom in the backyard, and want to connect garage and this enclosed porch if possible.

In this case, should I hire a general contractor or individual contractor for roof, garage, porch, etc? If I hire a general contractor, would he/she hire subcontractors on his/her own and move forward?
