Lending deal payment plan for payback

I did a lending deal in September 2024, and the project is still ongoing, has had many setbacks. The borrowers are finally just waiting for the clear to close on said project. They did inform me that they can't fully pay me back with interest in one payment and would like to set up some kind of payment plan to make me whole.

At this point I'm happy just to start recouping my money that I've put in and I know they will make good in the end. How would you go about structuring a payment plan for reimbursement? I have 50k in and am going to be owed approx 64 overall. Thank you for any input!
