Hiring a painting contractor

I am looking to hire a crew of guys to paint a house I bought and one of the contractors offered to for me to pay time and materials.  On past jobs I have agreed to price ahead of starting the job and am not familiar with paying a painting contractor this way.  Does anybody have experience with paying this way and do yo think it is a good idea?
