why would my property manager ask for my articles of organization, copy of my driver's license, copy of property deed?

I think they should be asking for your LLC's Operating Agreement not your Articles Of Organization though. The Operating Agreement states who has what role in the business and who can legally sign agreements for the LLC.
The driver's license is so they know who they are dealing with and a copy of the deed to show you own the property, although in most cases I think they could verify that easily based on assessment records showing where tax bills are mailed etc.
There are cases where people lie and say they own a vacant property and rent it out. I have not seem them use a PM to do that, but asking for documentation like this doesn't seem suspicious at all. Looks like the PM is trying their best to be thoughtful about how they operate and to do good business.
