Closing Refinance Via Remote Online Notary

Does anyone know of a DSCR lender who is able to close a refinance on a property in Memphis via a remote/online notary?

I know this might be an odd question, so here's the backstory. My wife and I are finishing up my first BRRRR. The original purchase/rehab was a hard money loan, and we had everything worked out to refinance this week. We work overseas (northern Iraq) and were going to sign/notarize a power of attorney at the US consulate on March 2nd so that my Dad could sign the closing documents for us on March 9. Because of the US war with Iran, we are unable to get the POA notarized at the consulate. It is closed, and even if it was open, it would be unsafe for us to visit right now as it is being targeted by Iran. The lender we had planned to use will not let us close with a remote notary, but currently we don't have any other way to do it. Any recommendations?

For reference, here is the basic property info.
-Purchased for $77,500
-Rehab of ~$40k
-Current loan: $120k
-Appraised for $174k
-rented for $1425/month

Edited to add: We are perfectly safe in a city far from any of the fighting. We just can't travel or visit the US consulate.

 Hey Cory, 

There are lenders that do a hybrid approach (half online/half in person signing) but there are not really any lenders that do a full online closing yet. 

If you are able to add someone that lives here in the U.S. to your LLC and give them written signing authority and a higher ownership percentage, this might be a way around this.
