How to end up with mortgage in LLCs name?

My fiancee and I are at the beginning of our investment career. What we havent been able to get a straight answer on yet is how to limit our liability. We started an LLC but are told to put the mortgage in our name, then quit deed it to the LLC (which, as im to understand, isnt very good advice even though many people do it).

Also, how do we continue to acquire property if these mortgages are in our name and we cant claim rent as income for 2 years?
