What are some good/friendly title companies in the area of San Antonio, Texas for assignment contracts?

Try Fidelity, or really any company, you just need to call an escrow officer and ask "We have a new deal that we are working on, and we may end up assigning the contract to a partner of our's; the contract has verbiage that says we may assign.  Are you used to those scenarios?".  If they ask for details, say that you'd likely be assigning the contract at a bit higher price and that margin (the extra amount between the orignal sales price, and the higher sales price on the assignment agreement) would be the assignment fee that you receive for sourcing the property for the partner.
