I am getting bids from roofing contractors and am debating between the traditional 2 ply asphalt (cap sheet, hot mod layers of modified felts or fiberglass), versus TPO, versus PVC, and also underneath them, a tapered insulation to give it a bit of pitch for water runoff.

For separate units here in the Seattle market I would do z channel or bi metal sound isolators fill the cavities with fiberglass insulation and use 5/8" sheet rock.
