You didn't mention rewiring the house in your post but I think you saw that there was  fuse box and will likely have active knob and tube throughout.

Here are some things to look for from an Insurance prospective:1.Any in-ground tanks (active or inactive)2.Any Knob & Tube or Aluminum Wiring3.If built before 1978, does the building have Lead Safe certifications4.Any wood stoves or secondary heating units.

Each of these steps are limited by cure times, drywall mud prevents you from moving forward until it's sanded and dried at least 2 coats, the mortar for your tile & concrete for your tube need to cure, then you have to grout and let that dry before you can even do anything else.
