One of these things that I've been thinking about is putting security cameras around the property (specifically in the driveway and front entrance area). 

Some people like to have a separate bank account for holding security deposits.  

If a prospective tenant can't come up with security, first, and usually last months rent they're not getting the keys to my property.

You must keep the tenants security deposit at a bank that physically operates a branch office in the State of NC.
