Post: Repair foundation that hasn't moved on 2 1/2 years?

We bought our house not knowing it had foundation issues. Our inspector did a zip line test and said the results were normal for the age of the house. The house was gutted down to the studs and completely remodeled. Now that we have lived in it for over 2 years there are no new cracks or problems and there has been plenty of heavy rain and heat (North Texas) that, if there was a problem, should have revealed itself. Should we fix the foundation or leave it alone? I don't want to damage the plumbing or the walls/doors/windows/etc. by raising the foundation or even stabilizing it. What are your thoughts?

Once a VA appraisal has been done and it comes in very low which kills the contract for a couple that couldn't afford to put any money down, should we still allow VA loans even though we feel the appraisal came in way low?
