We were trying to keep the plumbing off the exterior wall, but decided we're just fur out the exterior wall a few extra inches and move all plumbing in those bathrooms to the exterior wall.

As far as inside, dont think I would want to go through the expense of furring, insulation and drywall/paint for a rental, block is much more durable, repaint and next tenant.

If you have high ceilings you might consider running furring strips under the joists and over the plaster and apply the rock to the strips.

@Joseph Rios I would rather not know that it is or isn't, just put some 1x3 furring strip up and install new drywall ceilings up against the strips.
