Am I being difficult because I would prefer to work with a lawyer who at least practice my area of interest or does it not matter?

The areas that your partner's attorney listed aren't bad in terms of asset protection and business structure. I've found in my journey that there will be a need for separate attorneys..some for the business structure, lease agreements, etc, and others for processing evictions and things that actually require going to court. I don't know that finding one doing both is really of importance, in my opinion. In your shoes, based on the info supplied, if they both do business law, that's likely enough for the business structure parts you're looking for and likely either will do the job.
