Industrial building roof test? (2 questions)

Hello,

I have an industrial building, 40k sq ft. 16 k sq ft is a new roof.

I have two specific leaks that roofer is working to fix, after new roof install. We are having dry weather. What us best way to test if roof leaks are sealed? Should i turn up hose of water on roof for 8+ hrs to make sure two leaks on new roof are sealed? Im not sure i have luxury of waiting for next rainfall. Any suggestions to test roof leak is resolved?

2nd question, we have new roof and i was expecting slope to help drain new roof. See pics. Are these puddles normal or failure to angle roof towards drainage?
