No GFCIs in kitchen
Do people normally go ahead and take care of this themselves, or should I pay the extra money to use a licensed electrician, for liability issues? It seems like a simple enough task, but I'm wondering if there's a way to botch it and create a hazardous situation. thanks.

This can be a DIY task, if you have some knowledge about GFCIs and how the load/slave terminals are to be used, vs the line-in terminals. You also need to be able to determine which wire comes from the circuit breaker panel if more than one wire appears on a single receptacle (they aren't always wired as they should be).
If you don't understand what I just typed, then you should probably hire somebody and watch and learn.
