Eviction after tenant receives 30 day notice?

Out of curiosity (and this is probably state specific)...If a lease is ending and you give a tenant 30-day notice that you're not renewing it, and after 30 days they refuse to move, what happens? Do you have to go through the normal eviction process, or does it become trespassing at that point?

It can vary by state, but in general you'd have a holdover tenant and you'd need to evict to regain possession of the property.
