End of lease - do I need to send any letter

We're coming up to the end of the lease with my tenants and they want to extend to a month to month but I don't. Do I have to submit any letter saying that their lease will be over on (lease end date) and not renewed and not month to month?

Yes. Depending on city/state you must give them 30/60/x number of days notice. Almost all leases automatically become mint wth notice requirements unless specifically ended. 

Google your city/state landlord laws.
