Anyone been to Estonia, Latvia, Lithuania or Poland?

If so, any suggestions on can't miss items? These will be countries 95,96,97,and 98 on the trek to 100.(actually a stop in Prague would be 99, but won't count it) Long day coming today-ft myers to detroit, then to amsterdam. then prague and on to Tallin Estonia.
Tallinn, Riga, Vilnius and warsaw. Suggestions of food etc? Thanks for the Pittsburgh restaurant suggestions a couple weeks ago. Enjoyed 2 of them. Rich
