Renting out a house and moving

I am a 20 year old living in St.louis County right now and plan to move across the country either to South Carolina or Texas.  In St.louis I own a house free and clear and can get around 1100 a month for it.  I plan to rent that out and move.  In one of these state I plan to start a food truck.  I have the money upfront for a food truck, but I am just worried about money for the new house.  I will be in the area for at least 5 years and I am assuming that the income from my current renting house will cover the mortgage for the new house.  Any input would be great I just need some advice.  Same goes for a food truck if anyone has an input or ideas it would be great!
