Interesting discussion.  I'm an accounting newbie myself as well.  And it sounds like you're at the point of needing a  CPA/Bookkeeper to basically hold your hand and setup everything for you and answer all of your questions.  If you can afford it, do it.  Just went through that myself recently.  Paid an accounting firm via QB's website support section that specialized in QB training at an hourly rate.  It was expensive, but worth it.   

Just went through a similar conundrum myself here in NYC.  Not having any formal accounting or bookkeeping education and not having much success trying to learn from YouTube videos,  I decided to go with an accounting firm that does Quickbooks training.  Found them off the Quickbooks website under the Support/Find a QB ProAdvisor section and they basically held my hand through the whole process of how to do enter transactions, import my credit card statements online, cleaned up my chart of accounts, etc.  Most expensive route of course as you are paying them by the hour, but I learned a great deal and am now self sufficient and they've been tremendously helpful in giving me birds eye view of what I need to fix and focus on next.  Taking classes would have been too painfully slow for me.   Individual attention was what I needed.
