Hey @Tyler Joas!  I dont' have any leads in MN for you, but I do want to pass this along in case you're not already doing it:  I'd recommend always having a contract with your GCs (and any subs if you are going to GC any contract) that outlines work expectations, timeline for work completion and the draw schedule, and penalties for delays due to the contractors.  This will at the very lease scare of shady cats or cause you to have a tough "expectations exchange" on the front end of the work instead of in the middle or backend, which is pretty much fruitless because you won't have the agreements in place to do anything about their delays legally.
