Concern is that the employee who answered the phone can confirm they work there, but will not provide any further information. That's not too helpful.
Expecting one of their peers to reveal sensitive information to a complete stranger on the phone is a little optimistic. It sounds like you already have the paychecks. 

However, anyone have any thoughts on them both being restaurant workers at the same place? 

I really don't understand the concern here. If someone needs roommates, it makes sense to pull from your social and work circles to find someone compatible to live with. Would you rather two complete strangers share your house and lock themselves into a long term contract without any history with one another?

It sounds like you are looking for a reason not to rent to these people.

@Brandon DeVega We are in agreement about cleaning out appliances before junking them for sure. I've partially disassembled several fridges and freezers to do a complete scrub on them and they still are in use years down the road.

You never want to mix ammonia and bleach, as you can seriously injure yourself or someone else. The two chemicals together produce chloramine gases which in high enough concentrations can kill you. It is generally a bad idea to use many combinations of cleaning supplies as a variety of different products will have harmful reactions with each other.

I would buy an older used truck. My philosophy is if you have only one vehicle, it should be a truck. If you have two vehicles, one of them should be a truck. You can get an old Silverado off of Craig's List pretty cheap, and you will never regret having a vehicle that can carry a yard+ of dirt, full sheets of plywood, a bunch of shingles, or safely tow 6k lbs. Get a beater truck and a beater commuter and you will be set.

This point has been made earlier in the thread but I want to reiterate it. If this is a rental and you plan on holding onto it for a while, I'd put LVP over the entire floor and save refinishing it for when you sell down the line. LVP in a residential setting will last forever when properly installed, looks nice, and will save you from refinishing the original wood as tenants damage the floor. You are limited in how many times you can refinish wood flooring, so you'd want to keep those numbers down. 

A common misconception with LVP is that you can just pull up one piece and replace it when damaged. Due to the interlocking joints, you cannot do this (assuming a floating floor). You have to remove pieces from the closest wall back to the problem area to replace one piece, but that just isn't going to be a common scenario with a good LVP product.

A friend of mine built out a small but fully functional apartment in his separate garage, and used it for Airbnb. He had great success in Englewood prior to the city shutting him down. I know STR is different than getting long term tenants in, but I think the people that bought his house used it for longer term tenants.

You might be able to do medium term rental (traveling nurses, etc) if you're near the hospital, or you might find success anyways with traditional long term tenants.

If you have a written contract with the contractor, you can always take that to court and have a mechanics lien put on him.

A mechanic's lien goes on the property to ensure that contractors and subs get paid. Here's a link giving some more detail.

@Anthony Gayden How did you like the VanEd course? My girlfriend's dental office is closed for quite a long time and I'm trying to find a good online course to get for her to get her license. No time like quarantine time to learn some new skills and get a new license!
