just get quotes for most large jobs. The service providers here are all experienced working with remote owners.

Good luck finding contractors after a hurricane.

Associated Services Cleaning and Restoration. Never used them, but I spoke with the owner (Joe) some years ago. Seemed like a nice guy. They're a local operation. Big. $50/hr IIRC.

You may have difficulty finding a contractor for rehab. Many are still raking in that sweet Hurricane Michael rehab money from the Panhandle, and simply aren't interested in moving their crews east for less pay /greater oversight in crime-riddled Tallahassee.
