Stay away from granite, have to maintain surface with sealer. Quartz is good option. A lot more popular and many color options.

I’m a general contractor in California. We include language into our contracts used for material escalation. If you still wanted to move forward, I would suggest evidence of material quotes from back in December and current price quotes from Contactor. Really question him! Did he drag his feet on ordering material too late? That would be on him. A good contractor has nothing to hide and would want to work with you. We have experienced cost in many materials like wood, steel, concrete, etc. COVID has been this loop hole for many excuses.
