Gotcha a couple of options...
Are you buying a rental property or a home for yourself?
What is your current living situation? Are you renting, or do you own a home?

You are in Texas.
Sue him, go to court and get a judgement .
File that judgment document with the county clerk in the county/counties that he owns real property in.
Also, If he owns real property that is not his homestead, you may ask the judge to put it up for auction.
I know that works if a painter paints an apartment, and the apartment does not pay the painter.
Either way, he will not be able to sell those properties without paying up, unless of course he keeps them or they foreclose.

I'd just leave it alone.
Nothing good will come from this.
My two cents.

I think you're going to be hard-pressed to find somebody in your area that is a successful wholesaler who is willing to show you the ropes. Essentially, you would be getting into their pocket by being direct competition.
You may try to scoot a couple cities away that is not going to be your main area and try to find a wholesaler who I can show you the ropes.
You ever watch the Youtube guy Investor Army? He's all about wholesale and goes into great detail about what to say, what to wear, what to drive, etc.

Did you back out of the deal because they would not fix it?
That's a strong assumption to make.

Nice!
That's a value add on the half bath. What did that 1/2 bath cost you?
What kind of loan did you do with the bank, and what kind of a bank was it?

Cosper,
I'm out here in the same area as you. I'm looking primarily in the Parker County area. I thought that finding deals would be easier seeing I'm outside of the Metroplex. Realistically, it's about the same as anywhere else. I have to remember, that's why it's called a market. That leads me to the conclusion that I'll find an average deal, unless I choose to be more creative or put in the work others may not be willing or capable of doing. It seems like there are a few key players with endless pockets out here, but they are only picking the low hanging fruit in my opinion.
I drove past a 12 hour old MLS listing the other morning. I kid you not, there were about 5 vehicles there obviously waiting to view the property. What did I expect, everybody is looking on MLS. However, I would've still looked at it if I was interested and put in an offer. Here's how I see it. The only way I can ever actually purchase is if I make an offer, regardless of what discouragement I'm feeling.
Keep on going and increase your creativity. Find a unique approach that compliments your skillset and comfortability and go after it.

I deal with this kind of stuff ALL the time selling new home construction in Texas.
1) Read your contract & read your warranty.
2) Revise your list and remove the items that are not covered by warranty.
3) Give them a call and be polite. Unfortunately I have to say that as people often get all worked up with angry tones, and ugly remarks when they call in for warranty. Let them know you have a revised list, you'd like to email in or give verbally.
4) Let them know if they could complete these few items, you won't bother them EVER again.
My two cents of what would work best in your situation.
