Make sure you have boots on the ground if you're doing out of state investing. You lose a lot of control and open yourself up to a lot of risk. You're completely dependent on the quality of your property management company and when they do a poor job screening, you end up with a destroyed property and expensive evictions. It can be done successfully but you need to understand all the risks before doing so.

You're handling the situation well with following the process for your area to evict properly.

Did you do screening extensively for that tenant? Hopefully you can screen out these types of tenants in the future but I know it's not always possible.

It could be a lot worse actually and you got lucky. That neighbor that had a kid that got bit, they could sue and it could get nasty. 

Pitbulls void a lot of insurance clauses. I'd recommend updating your lease to include the specific species that are deemed dangerous and void your insurance and open you up to severe liability. If you have a high quality property, that should be a non-issue.
