Guests will likely feel you're trying to nickel and dime them, but this may be expected if you have the cash to rent a boat. It shouldn't cause more wear and tear than kids running and jumping off it.

Regarding liability, I would avoid all advice and go directly to your insurance broker and counsel . Provide all the details you want to be covered and I believe Airbnb AirCoverage should provide additional coverage. 

We're renting a boat at one of our properties so we did a similar exercise.
